oatmeal cookie peanut butter

yield 1¾ cups

2 tablespoons raisins

2 cups peanuts

2 tablespoons quick oats, uncooked

1 tablespoon vanilla extract

1 teaspoon cinnamon

Salt, to taste

Mini chocolate chips (optional)

1 Soak the raisins in ½ cup warm water for at least 20 minutes before beginning this recipe.

2 Process the peanuts in your food processor for 5–10 minutes, or until completely smooth, scraping down the sides with a spatula as necessary.

3 Drain the raisins, and add them to the peanut butter along with the oats, vanilla extract, and cinnamon. Process again until completely smooth.

4 Add salt as needed for taste.

5 Stir in mini chocolate chips if desired.
